**Distiller**

The Distiller will be responsible for day-to-day spirit production, including milling, mashing, fermentation, distillation, maturation, blending, proofing, and quality control. The ideal candidate is technically minded, detail-oriented, and takes pride in producing exceptional spirits while maintaining a safe, clean, and efficient production environment.

**What You’ll Do:**

-   Execute daily distillery operations, including milling, mashing, fermentation, and distillation
-   Monitor and manage fermentation and distillation processes to ensure consistency and quality
-   Conduct quality control testing and maintain accurate production and batch records
-   Manage spirit maturation, blending, proofing, and bottling
-   Operate, clean, and maintain distillery equipment
-   Follow and improve standard operating procedures and production systems
-   Assist with new product development and recipe refinement
-   Monitor raw materials, spirit inventory, and production yields
-   Maintain a clean, organized, and efficient production facility
-   Follow all health, safety, environmental, and regulatory requirements
-   Work collaboratively with the distillery and broader Park Distillery team
-   Contribute to a culture of craftsmanship, quality, and continuous improvement

**What You Have:**

-   Previous professional experience in distilling, brewing, fermentation, or spirits production
-   Strong understanding of fermentation and distillation principles, with mechanical aptitude and comfort working with production equipment
-   Strong attention to detail, quality focus, and genuine passion for the craft spirits process
-   Comfortable working independently and within a small, hands-on production team
-   Experience with quality control, documentation, and SOPs is an asset; familiarity with Canadian distillery regulations is a plus
-   Able to regularly lift and carry up to 50 lbs. (23 kg), and stand/work on your feet for extended periods
-   Able to bend, reach, squat, climb stairs, and move throughout the production facility, performing repetitive physical tasks tied to production, cleaning, and material handling
-   Comfortable working safely around heat, steam, water, production equipment, cleaning chemicals and varying temperatures
-   Committed to maintaining a high level of cleanliness and organization throughout shifts
